| Dear Julia,
We
are smack, dab in the middle of the depths of winter here in New York
City, where the cold temps and piles of slush can make even the best of
us a little blue. I was very hopeful on Groundhog Day to receive a
unanimous indication that things were taking a turn for the better, but
it seems there was a a bit of a disagreement between the two weather
forecasting rivals in our region. Let the record show, I stand firmly
behind Staten Island Chuck because he is located much closer to where I
live then Punxsutawney Phil (and not just because he voted my way).
Regardless
of what the weather has in store for us this month we will likely be
finding ourselves spending more time indoors and thus, more likely to
feel under the weather or a bit glum. Make it a priority this month to
care for yourself - mind, body and soul. Nourish yourself with healthy
delicious foods in as many colors of the rainbow you can find locally
and organically. Find a way to get moving that keeps you interested,
motivated and fit. Calm the mind with meditation or your own preferred
relaxation ritual. Most importantly, feed your heart and soul with
time spent in the loving company of a partner, family and friends.
Keep your fingers crossed that spring is on it's way!

Soul Food
Think for a
moment of a food from your past, one that makes you feel great after you eat it
for no specific reason. Maybe it is macaroni and cheese, slow-simmered tomato
sauce, ice cream cones or potato pancakes. Eating comfort foods (every now and
then) can be incredibly healing, even though your rational brain might not
consider it highly nutritious.
Food has the power to impact us on a
level deeper than just our physical well-being. What we eat can reconnect us to
precious memories, like childhood playtimes, first dates, holidays, our grandmother's cooking or our country of ancestry.
Our bodies remember foods from the past on an emotional and cellular level. Eating this food connects us to our
roots and has youthening and nurturing effects that go far beyond the food's
biochemical make-up.
Acknowledging
what different foods mean to us is an important part of cultivating a good
relationship with food. This month when we celebrate lovers and relationships,
it's important to notice that we each have a relationship with food-and that
this relationship is often far from loving. Many of us restrict food,
attempting to control our weight. We often abuse food, substituting it for
emotional well-being. Others ignore food, swallowing it whole before we've even
tasted it.
What would
your life be like if you treated food and
your body as you would treat your beloved - with gentleness, playfulness,
communication, honesty, respect and love? The
next time you eat your soul food, do so with awareness and without guilt, and
enjoy all the healing and nourishment it brings you.

Food Focus: Beans
Beans,
or legumes, including peas and lentils, are an excellent source of plant-based
protein. Beans are found in most traditional cultures as a staple food,
offering grounding and strengthening properties that enhance
endurance. They offer a highly usable, highly
absorbable source of calcium for the body. A very inexpensive source of high
nutrition, beans can be rich, delicious and satisfying,
Lack
of sexual energy is often due to overtaxed adrenal glands and kidneys. Beans
are known for strengthening these organs (ever noticed the shape of a bean?)
and can help restore vital energy as well as sexual energy.
Beans
have a reputation for causing digestive distress, but this is usually because
they have been undercooked or improperly prepared.
To help reduce gas-forming properties, soak beans overnight prior to cooking,
increase cooking time, add spices like bay leaf, oregano or cumin, or add kombu
(a sea vegetable) when cooking.

Recipe of the Month
Easy Beans and Greens
Prep Time: 10
minutes
Cooking Time:
10-15 minutes
Yield: 2-3
servings
Ingredients:
1 can black
beans (or pinto, red, chickpea, lentil - your choice)
1 bunch kale (or collard greens, spinach, arugula - your choice)
Your
favorite toppings such as salsa, avocado or guacamole
Directions:
1. In
a medium saucepan heat rinsed and drained beans. Add your favorite seasonings and a little bit of water or stock and simmer.
2. Fill
a separate saucepan with 1-2 inches of water and bring to a boil.
3. Wash
and chop greens (you can use the stems too, just chop them in smaller pieces so they cook faster) and add to boiling water.
4. Cook
for 3-10 minutes until greens are bright green and tender. Drain off
water (collards are heartier and will take longer, most other greens
cook fairly quickly).
5. Arrange a portion of the greens on a plate, top with the beans and
finish with toppings of your choice.
Variations:
* Saute onion and garlic in olive oil in the pan and then add the beans. * Cook greens in vegetable stock instead of water and add the seasoned beans to the greens for a hearty veggie soup. * Spice it up with peppers - sweet, hot or both!
* Indulge yourself and sprinkle a little of your
favorite cheese on the completed dish - I often go for feta or a tangy
blue cheese.

Top 5 Ways to Eat Your Beans
1. Salad - three bean salad, spinach salad with beans, wheat berry salad with beans, the choices are endless here. 2. Spread
- make the food processor do the hard work for a yummy bean spread (or
for a hummus be sure to include tahini) to serve with carrots and
celery. Use your favorite beans, fresh herbs, spices, garlic, olive oil
and lemon or lime juice. 3. Soup
- there is nothing like a hearty veggie and bean soup to fill you up on
a cold day. Want to make it fancy? Puree the soup until it is velvety
smooth and top with toasted pumpkin seeds. 4. Side -
saute finely sliced shallots with garlic and herbs until soft, add
beans and serve warm over your favorite whole grains (quinoa is always
a winner). 5. Cake -
veggie cakes, that is. Puree beans and mix with chopped mushrooms,
onions, celery, carrots, a beaten egg, fresh herbs, spices and whole
wheat breadcrumbs. Bake in a lightly oiled muffin tin until browned.
Serve with a spiced Greek yogurt dip (cumin, paprika, chili powder,
salt and lime juice is my favorite combination).
